Post Ride Lunch :: Cranberry Stir Fry
One of the most important things to remember when preparing your meals is seasonality. Now, canned tuna is never really in season, so I would suggest something more natural like farm raised chicken or turkey. Here is a quick stir fry recipe to top off your tummy after that grueling workout! What I like most is using the fresh and very seasonal Cranberries and Avocado (from the tree in our yard). The brown rice is delicious and nutty in this recipe, and a nice bit of Redmond’s Sea Salt pulls the medley together with perfection! I use Trader Joe’s Brown Jasmin Rice, and I cook it with 1/4 cup less water than prescribed, and for less than the usual time in my rice cooker. This gives the rice a nice chewy texture and guarantees you won’t lose nutrients through the absolute cooking to death of the rice.
1 cup of Brown Rice
1/3 cup fresh Cranberries
1/4-1/2 Fresh Avocado, diced
1 can of Tuna, or 1 chicken breast or Tofu
Raw Organic Unfiltered Apple Cider
Redmond’s Sea Salt
In a skillet, heat a small amount of Olive Oil on medium. Add your protein and cook or sear to desired perfection. Turn up the heat, and Add cooked brown rice and cranberries. Sprinkle in Apple Cider Vinegar and Olive Oil as desired. Once all ingredients are heated and cranberries are just cooked and beginning to pop, remove from heat, pour into bowl, and add diced avocado and salt to taste. And voila! A delicious, healthy antioxidant and healthy fats-full meal!
